Q: Is the simulation of the earth’s rotation adjustable? Is the rotation real-time?

The earth rotates once per day. It is very slow. You can simply turn the rotation off to have a quasi-static picture. The rotation is about once per 5 to 15 mins.

Q: Is it possible to have this come on at a certain time each night?

No, there is no scheduling ability built in. It can turn itself off, but not on. Even if you use an external timer, like a smart outlet or a light timer, it won't remember the last settings. Any time I turned it on I always had to press several different buttons for out preferred settings.

Q: Would this work in a gym?

I've used this in a classroom (~30'x25') that has 15' ceilings. It doesn't cover the entire ceiling, but a large chunk of the middle with little bleed onto the walls. It was clear enough to point out constellations, but not as clear as to when used in a traditional bedroom. So, my opinion is that it would work fairly well in a gym, but it's not ideal.
