The larger 4.23 oz. box has the specific proportions on the back: Add 1 1/3 tsp (4g) for every 2 1/2 Cups of Water (600 ml)

Q: Is this what they use to make agedashi tofu?

I did a little bit of research and found that agedashi tofu's ingredients are dashi, soy sauce and mirin and dashi is usually made with kombu and dried bonito flakes. Hon-Dashi (Bonito Fish soup) used bonito power and bonito extract. Not the same ingredients. So you might want to use Bonito flakes instead of this.

Q: How do you store this?

Store in cool place. Keep lid tightly closed . Should last 6-12 months . Does not need to stored in refrigeration. B ut you can keep longer in refridgeratiom. What are you cooking and how did you hear about it.
