I have not used it much yet, but so far it's okay.
Odd smell, but fonio is like that. I will use it eventually to make pancakes.It is low histamine, low oxalate and IC bladder friendly. What more couldyou ask for?

Great addition to GF flour mixes
I use Fonio for baking. I haven’t been able to find a bread or a cracker that works for my blood type diet.Fonio works well in combination with other flours. It may be fine on it’s own. I’m glad that I tried it.

Hard time with the texture after baking.
I think multipurpose fours are amazing especially when you factor in all of the chemicals and metals in flour to begin with. I have a lot of allergies and one is metals. Flour has a high metal count - so I thought this flour would be right up my alley.It took me a while to get around to trying it as well because I wanted this experience to be prefect. I set out to make some cookies and used it with another set of ingredients. The mixture seemed fine from the beginning and they baked pretty good from what I could see but that all changed once I took a bite.I did not like the texture of the cookies from the flour. I have a hard time with textures and I am learning to like and cook with gluten-free ingredients. This is one ingredient I can do without. Maybe gluten-free products are not my thing and I will give this product another try in the immediate future but right now I am not happy with it.I expected something else and this one did not deliver. Plus I think it’s very expensive for what you get.I am going to try to bake something else with the flour in the future to see if my taste buds change.Outside of that I will not be buying this flour again.

Not a replacement for flour mixtures
In testing this flour I wanted to give it the very, very best chances of working, so I used it in conjunction with a foolproof allergen-free chocolate cookie recipe that's very forgiving and my standby. I was skeptical a flour like this would work on its own. Gluten-free flours can be purchased separately or in a mixture. I get the single ingredient ones with the intention of mixing them. They all have different properties and don't tend to work well just on their own. Still, it was worth a shot.My misgivings weren't unfounded. The cookie dough itself was so dry and crumbly I could hardly get it to stay together. The resulting cookies were coarse, crumbly, and dense.I do like the flavor, and it's worth trying, so it's hard to know how to rate this star-wise. For my purposes, at least, it's not a success on its own, but then I wouldn't want to use rice flour on its own, either. So I'd use it only as one ingredient in making a custom flour mixture for allergen-free baking. It's possible it might hold together better if you can have eggs and other binding ingredients like that, as well. But compared to what I normally use (which is a flour mixture), this isn't something I'd turn to again. Its properties on its own aren't as good as using the gluten-free flour mixture I already know works well.

A decent flour for those who want / need a gluten-free flour, but WAY too pricey!
This fonio flour is an excellent resource for those who need or want gluten-free flours. I don’t need them, but do enjoy using alternative type flours in my baking and cooking. I primarily have been using this flour as well as an oat flour to fry veggies. There are several good things about this flour, including the fact that it’s non-GMO, kosher, and vegan.A quick, comparative price check around the Internet shows a wide variety of prices. I feel that for what you’re getting here, it’s simply way overpriced and not worth it. Digestible 😊
We are still new to this flour and learning how to use it in place of glutinous flours. From a digestive point of view it is delightful with no adverse affects.
