Do any decorators use these for storing paint brushes, if so will it take 2" 3" etc?

It should be ok but it's more for hand tools spanners chisels. Screwdrivers

Has anyone used theirs for storing chef knifes?

I use it for screwdrivers and stuff and don’t think it would be anywhere near durable enough to store sharp knives unless you put covers on them. Plus the pockets are like 120mm so the knives wouldn’t be very secure I’d imagine.

What are diameter of this when rolled up?

Not meant to be rude but depends on what you put in it! I have a fairly decent set of tools (excluding sockets) in mine for car and it sits around 5” but it can expand to take additional tools, or I assume would shrink if used for alternative items like paint brushes
