It is not advisable to use the mat without a baking sheet.

Can the baking mats be cut to shape?

Yes they can, doesnt hurt their at all. They still lay flat.

Can these be used as cutting boards also?

Just like your kitchen countertop, you can USE a silicone mat has a cutting board, but that doesn't mean you should. Cuts into the silicone are permanent. Let me re-emphasize that- - permanent. That means that you will in, short order, turn the mat into a sieve. Use your own judgment.
