It really depends on your skill and patience. The limit would be the amount of material you have but joint compound works. The limit is when you get tired of pumping it. Maybe easily 6"x6", but you can go bigger

It us the red cap that goes on top where you fill it , poke a hole in that or your mud will not flow

Can you use regular drywall mud?

Yes. Use All Purpose mud as it has more glue than Plus 3 which will help it stick to the surface better. Add enough water to the mud to give it the consistency of pancake batter. Wait a few minutes after spraying to give it a knockdown look. Good luck…
