Works great with induction cooktop
Bought this along with the Duxtop portable induction burner, just to make sure I had at least one pan that would work. Very responsive. I have found some of my cookware which hold a magnet on the bottom will not work with my induction burner. The manual says there has to be enough metal to create the magnetic field and sometimes small diameter pots/pans will not work.After that, it's basically just a standard stainless pan. Cook as you normally would on stainless. Stainless works best if preheated and then generously greased, FYI.

What a little workhorse!
First let it be known that the handle on this beefy little skillet is SMOOTH and WAY COMFORTABLE!It’s also not so shallow, it can hold a lot, and you can still flip food in it...didn’t think so at first, but wrong!I love it.And since it’s kind of deep, you can deep fry in it and not have to use a ton of oil to do it.I originally bought the Duxtop 8” glass lid to mate on a new calaphalon 8” skillet at the same time.but that doesn’t work, And, the Calaphalon skillet handle had ridges under it that really dug into your fingers, no way!so I sent that back, got the Duxtop 8” as long as I already had the lid, and Bam!! This is my favorite now.As soon as I picked up the handle, it had me. I’ll switch out all my bigger stainless skillets to Duxtop ones in time...Their handles are what I have been missing out on with ANY pan, pot, or skillet I’ve ever used.This 8” Duxtop is super solid. I’ll never have to buy another small skillet again.The top is the bomb too....but that handle..Amazing!!

Great pan, but cooking surface is barely over 6 inches
Heat it up before you add the oil and it's completely nonstick. Cleans up like a dream. I love it. I thought it would be too big when it said 8.5 inches. It's nice and deep, too.

this is NOT a 10 inch skillet
This fry pan was purchased as a 10 inch skillet as per the ad; it is a 10.75 inch pan. I was told by the Duxtop rep that the 10 inch skillet was measured from the BOTTOM of the pan. I told her I had never heard of a skillet being measured from the bottom. She said the replacement glass lid would fit it, so I ordered the lid; it did NOT fit the pan. Back it went after a second Duxtop rep told me they didn't even make a lid for the so called 10 inch skillet. I am keeping this pan because it is a great pan but sure wish the ads had been clearer for the pan & lid. Even the chart in the ad is incorrect.

Excellent inductivity and heat dispersion
Here's some experimental results measuring inductivity and heat dispersion: This pan heats quickly. I have been testing 8" induction-compatible skillets by heating 4 oz room-temperature tap water on HIGH and comparing the time it takes to reach a boil. Results for Duxtop 8" vs IKEA 8" Trovardig (both are actually 9" measured at the largest diameter.) Duxtop=33 seconds. IKEA=83 seconds. The bubbles that appear first on the bottom the pan indicate where most of the heating is occurring, and were circular in both pans. In the Duxtop, the circle was about 5", covering nearly the whole bottom of the pan. In the IKEA, the circle was about 3", meaning the heat was much more concentrated toward the center.The IKEA has a non-stick coating, while the Duxtop does not.In earlier tests of the IKEA verses other non-stick pans, the IKEA was middle-of-the-pack in performance, but none of the other non-stick pans were anywhere nearly as good as this Duxtop at inductivity and dispersion.

When it arrived in the mail I was slightly disappointed. One of the reasons my research concluded I should go with the Duxtop is because I found the handle on their pot to be *perfect* for me. When the pan arrived it obviously did not have the same handle (see photos) which also lacks the V that allows for a cooler handle. However as I worked with it on the stovetop I found that the handle was actually more appropriate for the pan and allowed me a better grip. It even stayed completely cool. If that grip was on the pot I would have returned it, but because they have different uses and use modes the handle is fine.Part of the reason I was interested in getting some new cookware is that our gas stove has a manufacturing defect that causes seriously uneven heating (I turned the lights out and the gas way up for the photo). On this count the pan performed about as well as could be hoped. It is, after all, a pan and not magic. Having read all the cooking advice on the various pans has made a remarkable difference. Absolutely nothing stuck and the pan was clean (to my satisfaction, maybe not yours) after 30 or so seconds of scrubbing.
