Awesome Dashi Soy Sauce
This soy sauce is so good that my family no longer needs to buy expensive dashi soy sauces imported from Japan at Japanese grocery stores.Just a heads-up—this isn’t a regular soy sauce. It pairs exceptionally well with cooked fish, natto, and various dishes, but it’s not a substitute for regular soy sauce and shouldn’t be used for sushi or sashimi.

Authentic traditional Japanese soy sauce from Shimane
According to my research, Umami Dashi Soy Sauce is made using traditional techniques that have been passed down for 10 generations in Shimane, a countryside in Japan known for premium soba noodles. This is not a brand sold in Japan but the product is sourced from there.Many websites and independent food stores sell single bottles for around $13 + shipping, so this price is average except for saving on shipping through Amazon.It is much tastier than the stuff that comes in huge bottles or plastic packets of Kikkoman you get from Chinese or Japanese restaurants. This is definitely worth a try.CAVEAT... a very fast best-by date: DECEMBER 2024. I don't know if that is normal or if Amazon is shipping old stock.My rating system:5 Stars = Knocks it out of the park. A great value!4 Stars = Excellent product. A solid buy.3 Stars = It provides some value, but perhaps not as advertised.2 Stars = A little dubious, so do your research. Read the critical reviews!1 Star = Avoid this product and look elsewhere.

Great new combination of three traditioal flavors
I have been using this sauce for a little over a month. The combination of three of the most traditional flavors in Japanese cuisine (soy sauce, fish sauce, and Kombi) are a wonderful new flavor profile. I have used the sauce in place of soy sauce with sushi (I know, almost sacrilegious) over rice, and with other vegetables and Asian foods, and it always adds new depth and taste.I know the bottles are small, the price point is somewhat high, but it's worth a try. Perhaps if they can sell enough of it the price will come down?

Remarkably good -- umami to the max!
I have bought and consumed all kinds of different soy sauces over the years -- from big (cheap) bottles of USA-made Kikkoman at the local Asian grocers, to that amazing, handcrafted (and expensive) stuff that was featured in the series Salt, Fat, Acid, Heat. I decided to take a chance on this new dashi soy sauce by Cabi at the recommendation of our daughter who lives in NYC and found it for sale there. I'm so glad I did! First, this is actually crafted in Japan -- not Wisconsin like the aforementioned Kikkoman -- and the flavor is out of this world. The dashi really brings out the umami, taking this sauce to the next level. I just can't get enough! Looking for the Subscribe and Save button as I type this...

Alright, so this soy sauce…wow! It has so much flavor but not too salty. Used it with cold tofu or on avocado, instant hit. Wish the bottle was bigger, I’m going through it way too fast. Perfect for marinades, dressings, or just a drizzle over some steamed veggies. Totally addictive.
