Use sparingly
This was my first time of using xanthan gum, and I read it a couple of tricks about mixing it with either dry ingredients or a small amount of liquid ingredient before adding it to your recipe. I have gotten better results by using it a little more sparingly. I had a recipe that called for 2 teaspoons. I used only one and a half teaspoons and it thickened the product perfectly.

Great as a protein shake thickener
I add 1/2 tsp to two scoops of protein powder in a shaker. When I add water it gives it the consistency of the prepackaged protein shakes. Definitely recommend.

Don’t Clump!
I’ve tried other xanthan products that would be very difficult to mix and this one dissolves without any issues. That for me makes it so much easier!

Enchilada gravy
I used the xathum gum to thicken the enchilada gravy.It replaces flour, almond flour and corn starch for gravy, soups, chili and gumbo.I gave 1/4 of the package to a friend who is also on a low carb diet.I also gave her the Amazon link so she can buy it in the future.

Home made ice cream
I'm experimenting with making ice cream at home. I just used this stuff this weekend. It's like magic. Nice texture, few ice crystals. I put in 1/8 of a teaspoon for about 12 oz of half and half and a similar amount of condensed milk. Really impressive.
