First class knife that everyone should own.
I've seen the advertisements for the Bokashi Kasai and thought it looked amazing. It has great reviews on their website and it definitely lived up to it's billing. The Kasai is sharper than any other knife I have used in the kitchen after 20 years as a professional chef. The blade is perfectly balanced and the AUS-10A steel cuts with razor edge precision. The 45 folded super steel layers leave a beautiful stain free pattern on the full tang blade like I have never seen before, all finished with a stunning pakawood handle and logo on the heel this knife is a true marvel to wield in the kitchen!

Pretty and decently sharp, very heavy leading to prep fatigue
This is a very nice knife, its sharp and will cut through most everything for the traditional at home chef. It has an immense amount of heft to it which can be great but also brings me to giving its 3 star rating. Its functionality and beauty are both great for the traditional at home cook. I am a professional chef and have been working in and around kitchens for a significant period of my life. I have experienced many different knives and the functionality that different knives or types of steel bring to the table when using them. I wanted to give this knife a shot because I was looking for a nice middle of the road knife to use so I am not always using my favorite knife for most tasks. My go-to is my 8 inch mighty mac professional series which rings in just slightly less than this knife as far as purchase price. I love that knife it is well balanced, light, thin, comfortable, and very sharp as well as its ease to sharpen and length of time in which the blade holds an edge. The Bokashi chefs knife is rather heavy which leads to much earlier fatigue than normal. The overall width of the blade is not as thin as I was hoping for, the ability for it to cut an onion or tomato very thinly was much more difficult than I'd prefer for the cost of this knife. Comfort of the handle is wonderful as I have very large hands, it fits well. It is a big knife and those with small hands I feel may easily be let down by the size and weight of this knife. It is a very beautiful knife as I have received many compliments from colleagues. Out of the box it was not quite as sharp as I was hoping that it would be, coming in priced higher than my Mac I had a pretty fair benchmark for this knife to meet and as I am not disappointed, I find myself not being fully satisfied with my purchase of this knife. I could have saved my money and spent a little more on a knife with a known reputation. I dont know if I will just put this knife up on the shelf, or continue to use it and find where this knife outshines any of my other knives. I'd recommend for beginners but as a seasoned chef dont hold your expectations high as it being able to be justified by its price tag.

Nice handle, balance and overall quality
This knifes chraftsmanship is decent. Nice handle, balance and overall quality.. the factory edge on the other hand is extremely poor quality. I own many Japanese and German knives and have never bought a knife that was so dull fresh out of the box!For this reason I will not purchase a bukyashi product again..

Nice to have this.
I gave this to my hubby for birthday gift, he loves it. I slices through anything easily. We are happy to have a nice sharp knife right out of the box. Pleased and would recommend.

Advertizing discrepancy....
I asked a question which was specifically not answered by manufacturer....which keeps my question off the site for people to see....so I will post it here....Bokashi shows these knifes for $60.00 on their website ans also list 67 layers of steel....here on Amazon they show 45 layers of steel....clearly there is a discrepancy selling many more layers at a lower price.....I ask the manufacturer for a cross section pic of one of the blades showing layered forging....as I believe this to be suspect

I have a knife roll full of Wuustoff's and I still love them. That being said

That being said...wow! I love this knife. Sharp as heck right out of the box and I have put it to the test. Holds an edge and the balance is great. I wanted a smaller knife and have been intrigued by the Japanese knives. This one is perfect for my needs. I have only had it for 3 weeks so we will have to see how it holds up over time but so far I am extremely impressed. on another note..tried to order one directly from Bokashi. That was back in May. still have not gotten it yet they keep telling me it is on the way. Lve Amazon,,,Bokashi customer support sux

A must buy
I Absolutely love this knife. It's Literally the sharpest knife I have ever purchased. It feels amazing in my hand and looks beautiful. The handle is amazing and the metal work is phenomenal. Can't wait to get the 7" santuko

Great knife, no protection for the blade when not in use!
Love the knife, quality is excellent, great presentation only negative is in storage, no means to protect the blade. A leather sheath with a design would be perfect. A professional chef wouldn’t require one but I use mine in my kitchen and when not in use I display it. I presently keep it in the box.
