The breakdown is 1.4cal/ml vs 1.0cal/ml, the increase in calories comes from an increase in the macro-nutrients like protein, carbs, and fat.

How long do these last once opened in the refrigerator?

Each shake is designed to be one meal - they're not really made to keep once opened. Based on their ingredients, I would say not more than 2 days, but even that might be pushing it. They have enough sugar in them that they might start growing mold or yeast in hours, rather than days.
