Love plantain flour
I've read that you can't substitute Plantain flour for plantains, but I'm trying to prove that wrong in my own cooking and so far I'm having some luck with the plantain flour. No, its not nearly as good as a green plantain for baking, but it is a great flour substitute while you're on the AIP. I've been trying to work up a conversion for the flour vs. a real plantain and don't have it down well enough to publish that yet, but I even though the recipes aren't turning out perfectly, they have all been edible (which is a lot more than I can say for most AIP foods.)I'm sure there are lots of great plantain flour recipes on the internet, too, but I love experimenting, so I'm just having fun substituting it for plantain or other flours. And although I haven't come up with the perfect moisture to flour ratio to replicate a plantain, I have had success substituting this 1:1 for a variety of other AIP flours (like tigernut, arrowroot, etc.)

Value for the money
I have used this product as a gluten free flour product along with nut-flours (almond, coconut etc). The flavor is on point and just an outstanding product. Being Caribbean I've made bread, porridge and cookies

Great "Grain-Free Flower", but...
Even when mixed 50/50 with other non-grain flours, it is Very "banana" flavored.

I thought I would try some types of gluten free flour and this was on the high end of the experiences. I like this one a lot.

Resistant Starch/Alternative for Almond and Coconut Flour
Like this product. I use because of the resistant starch found in plantain flour as well as for cooking/baking.Its a flour you can use if don't like or are not able to use almond or coconut flour.

I really wanted this to work 😐
I use several plantains a week in making bread, and saw this as a real time saver, unfortunately the smell is bad first thing you will notice, and the taste is the same. Not sure what other size packages they offer but I suggest getting a small one to test. Again this is nothing like the real thing, and I do not recommend it. On the other hand I love Iya's Cassava flour and their Tiger Nut flour.
