Q: Can 2 -7500 watt heaters be connected to this timer so both will turn on at the same time?

Q: how do I activate override switch to go from B to A display? Attempts to do this have failed thus far.

This confused me as well....the saddle switch is 3 point......I believe middle is off, up is with the timer and down overrides the timer to supply constant Voltage

Go to any electrical supply store. Even Lowes or Home Depot should have them.
