Q: Can you mix this tea with cold water or does the water have to be hot for it to blend well?

You can use a blender to mix it with cold water, otherwise it won't mix.

Q: Is this Matcha very bitter? I am wondering whether the first Matcha I tried was just incredibly bitter, or if all Matcha teas are.

All teas contain varying amounts of tannins, the compund responsible for giving coffee, tea, and wine a bitter taste. Some ppl are more sensitive to tannins than others, so it's going to taste different for everyone, but matcha tea does have a relatively high tannin content compared to rehular green teas because you're drinking the whole leaf. Short answer: most matcha is more bitter than regular green tea.

Totally normal. The powder is so fine it will act like that when any force or air is applied. Enjoy!
