What can an airfryer do that an oven can't? Seems like these are glorified counter-top ovens.

Look, these are NOT convection ovens and they put preform them by a bunch. People get this confused. Convection ovens don't use oil, got air and elements that surrounds the food 360 degrees to make it extra crispy and give it darn close to a deep fried taste. You can not get a sear on a steak that looks like you set it on a 500 degree pan on a connection oven. You have to preheat a connection oven for like 15 minutes a lot of times, you don't do that with an air fryer. A connection oven years nothing but elements that if you're lucky, will cook most of the surface of whatever you put in it. Air fryers again, are 360 degree using a combination of hot air that sounds your food evenly cooking it way faster and anytime good is cooked this way, it traps the moisture inside of it way better so food it's often juicier. (Mainly meat) a connection oil doesn't come close. Not too mention a convection oven is way tougher to clean.

Prior to first use, we recommend that you remove and discard any packaging material, promotional labels, and tape from the unit. Is there any plastic on the interior of the fryer that?

No, the inside of the fryer is a non-stick surface. Not sure what's underneath but it's not plastic or it would melt. The fryer gets extremely hot during use.
