The easiest way to get 2" x 3" flying geese is to cut the parts individually since a 2" x 3" unit is not a standard size. For your goose color cut a 21/2" x 3 1/2" unit. For the triangles on each side cut 2 - 2 1/2" units. Draw a line diagonally across the squares. Lay the squares on the corners of the large unit and sew on the line making sure the orientation creates the flying geese point

Q: What does she mean by a finished goose 3x6? Does that include the border seams? Or does it measure 3.5 x 6.5?

It means that when you attach it to the rest of the block that you are sewing it to that it will be 3" x 6" finished. Before you attach it to the other pieces it measures 3.5" x 6.5". I hope that helps you to understand this. Kind Regards, Sue

To make 3 x 6 flying geese, the longer piece would be 3 x 6 and the two other pieces would be 3 x 3. Usually a pattern will tell you how to cut your pieces.
