it is too good to say that please always sell the japanease flour
I made the Shokupan JP bread that is the best texture that I have ever made it, which I might just use organic bread flour from somewhere. The gluten works well done. Please do not stop sell this product because it is hard to find great flour with less allergy gluten here, US.

Great flour
Japanese flour is what I have heard that it has high qualities, so I want to try even it's pricy including the shipping. As the picture displays, it's so fluffy and proofing. For the same process and ingredients, it makes me save more times.

Perfect for low hydration ramen!
I love this flour for making ramen at home. It absorbs water so well! The gluten bonds form together to make a nice and chewy noodle!
