I love it but something you must know
I’ve been using my vollrath pro for 5 or 6 years daily for every meal and I love it. I like how responsive the heat is and that it goes all the way down to 80 degrees. It’s pretty heat accurate and you will get used to the initial heat surge in the first 60 seconds or so. So I go in a little low and raise up the temp as needed. I’m a former gas stove (55+years) cook and it’s possible I won’t go back.I love love love cooking by temperature . Start my scrambled eggs out at 260 for a minute or so and drop down to 220 to finish. Perfect every single time. Wish i had this when I catered instead of gas burner. Ilove that it doesn’t heat up the kitchen in summer months. Here in Virginia that’s at least 6 mo’s of the year. I love if you forget something in the fridge you can hit the off button and resume at same temp instantly when you return.The knob is harder to clean around but it’s so much easier to turn than repeatedly tapping a button. But rest of the unit really easy to clean. Mine still looks brand new.The bad However is that it has a 6 in coil and will warp larger 10-12 in Teflon pans eventually. Im cooking for 2 so using a little smaller pan 8-10 in for most of the time is working for me. I am looking at the new 8 in coils comming out now. I would stick with 1800 watt units. I had a different brand 1400 watt unit a few years before that I thought was sluggish. This unit has really exceeded my expectations. I bought it to tide me over during a kitchen renovation we were doing ourselves. I have a gas unit that I bought but didn’t install because I’m still enjoying this so much. I have to admit I bought mine from an online restaurant supply store long before Amazon sold them. Same exact model though so I thought I’d share. Ps the Glass top has held up terrific

Great for the price
We need a better home induction cooker than most commercially available ones because we make bone broth and it can take 24-36 hours to cook depending on the type of broth.Most induction burners made for home use have an enforced shutoff that you cannot override - usually about 10 hours.So this one and the Breville Control Freak were ones we tried. We had one of the Vollraths that lasted nearly 12 years but due to a user error (we did something really dumb) it eventually failed.We tried the Breville next, and it was better in that it was MUCH, MUCH more precise. It could go to ONE DEGREE Fahrenheit level of precision. That was amazing, and the Vollrath only can do 10 degrees.This is the biggest issue we have with the Vollrath.The Breville was much louder and stood much taller - a much larger footprint. The Breville was really annoyingly loud and stood a bit too tall for our comfort. We could have lived with those issues, but sent it back in the end because it started buzzing after a few months. We could not get help from Breville customer service after repeated attempts to call, leave voice messages and emails.Back to the Vollrath for us.So we have another one and it is working well. Sometimes the temperature issue is a pain. That 10 degrees can have us going from something that does not even bubble at the 190F setting yet boils like crazy at 200F. (We never use the Centigrade setting.)One thing we found, which is really odd, is that if we use the other unit of measure (the numeric scale one), that we actually have more control. We can pick a number there that has something that must be in between since it simmers at the right level. Go figure.In any case, it is a durable machine that costs a lot less than the Breville (at least when we got it - around half the price) and is quieter, smaller, and does not have electronic failures producing strange buzzing noises.

Good, but misleading description
I was initially going to give this a one star rating. Amazon's title for this includes the description "14 inch," and on Vollrath's website they specify the maximum pan size as 14". So, at the same time I ordered the burner, I ordered some induction cookware that had a 12" base -- ordered from a vendor that has a difficult return policy and charges shipping (unlike Amazon Prime). When the induction burner arrived, the first thing I saw in the manual was that the burner was intended "to be used with induction-ready cookware with a flat, ferrous base measuring 4-1/2" to 10-1/4" wide." That is, it is NOT intended for use with cookware that's 14 inch, which is what's advertised on their website. My guess is that the 14" figure advertised simply comes from the largest size pan that won't block the controls. Giving specs of 14" for an item that says in its manual should be used for a maximum 10-1/4" is misleading at best, and some might characterize it as fraudulent misrepresentation. Does this discrepancy in size matter? Very likely. The induction effect drops off with distance. A 10" pan sits directly on the surface, while anything much larger sits slightly proud of the surface. I tried boiling 8 quarts of water in a 12" diameter induction ready stockpot, and gave up after an hour. So, to some extent, I wasted my money buying induction ready cookware intended for a 14" capacity burner. Why NOT one star? Because the burner works pretty well on pans that are within its recommended (in the manual, not advertisement) capacity. Cast iron cookware works fantastically well: when I put a 10" Lodge frypan on the burner at 100% power, the center of the pan was >600 F in four minutes. Of course, the outer edges of the pan aren't that hot, but that would be the case for any burner smaller than the diameter of the pan. And, the burner worked well with a Paderno carbon steel omelet pan: high heat for the initial stages, then "instant" drop in temperature when the power was turned down (as "instant" as you'd get with a fairly heavy high heat capacity pan on a gas burner). So, the burner works quite well when used as recommended in the manual. But, be aware that the recommended pan capacity is significantly smaller than the advertised capacity.
