Dragees are panned candies: flavorful nuts or spices coated in sugar. These Dragees are produced through hard panning, where the nut or spice or other center is rolled around a hot pan and periodically sprayed with a concentrated sucrose syrup, which evaporates to leave behind a hard crystal coating. In the US, we are most familiar with Jordan almonds, but also gobstoppers, nonpareils, and jelly beans (soft panning). Mezzasoma is part of the brand Bonci, which produces our Cantucci.
