What are the blades made out of? Plastic or metal?

Metal, but, if you can get an extra set, do so. We couldn't get in touch with the company to order more. Also the motorhousing is plastic. Be ware, if a rock gets in with the leaves, the blades break and the plastic attachments break. Our motor quit after a few hours use along with broken blades when a renegade rock got in. And it will happen. Called the company, no callback.

Can the cutting blades be adjusted for course or finer mulching?

No, there are 3 separate but fixed blades inside the machine.

I have a very mature sycamore tree with leaves that are extra large and rather leathery - they do not much well. Think this machine can handle them?

We have oak trees. The machine handled those leaves very well. Make sure the leaves are dry.

Can this handle carboard?

No - it is not that great for leaves, and cannot handle anything other than leaves in my opinion. I was disappointed.
