Go ahead and try something new!
As soon as I got this pan, some of the first things I made were scrambled eggs, omelets, and pancakes. It has NO problem with stickiness; the teflon works as promised. Overall the pan is slick, light, and high quality. I feel like just because I started using this pan, I cook so much better.Last night, for example, I was making dinner with my roommate, and we decided to experiment on some quesadillas we were making. We cut up some onions and tomatoes, put a little oil and butter in the pan, and let the onions and tomatoes fry for a bit on low heat. After a few minutes I added in some Bush's baked beans (I rinsed the flavor out lol) into the mixture in the pan, then realized I wanted one last thing: the mexican four cheese blend. I added in a generous amount of cheese and it melted very nicely into the mixture of onions, tomatoes, and now beans. Lastly, I added in some butter and salt to improve the consistency and flavor a bit, and voila! We had this cheesy blend of beans, onions, and tomatoes (my roommate added some turkey) that smelled like heaven. Our flour tortilla was on another pan frying, but when it was done, we poured this cheesy mixture on it and finished it up, with very little residue on the saute pan. Despite all that cheese and mess in the pan, nothing stuck as promised..it was very easy to clean off with water. PLUS, the quesadilla was FANTASTIC thanks to our little food experiment on this pan.If I could, I would give it a 6/5 :).

Great saute pan!
I have mostly Calphalon Non-Stick Cookware. I originally purchased other Calphalon products not knowing exactly what I would get. But I had done some research and chose the Calphalon brand because of its good customer reviews and detailed product information. Well, I loved my first piece and have slowly been replacing all my cookware as it becomes old, too worn or because I just can't stand it anymore, with Calphalon pieces. This saute pan is no different. It cooks evenly - something that non-stick pans don't always do. It's both heavy enough and light enough to feel good in my hand,(since my hands are very arthritic, that feature is very important to me), moving it while on the stove cooking or carrying it to a plate or to the sink for clean-up. The non-stick surface is so easy to clean that I often just wash the pan by hand, but it is dishwasher safe and using the dishwasher does not ruin the non-stick surface like it does to many cheaper brands. The pan is also a perfect size for making a grilled cheese sandwich, scrambling eggs for one or two, sautéing onions or many other tasks for our household which has been pared down from seven to two as our children have all grown up and now live on their own. This pan cannot go in the oven because of the handle, but I chose that since I knew it would be unlikely that I would use a small saute pan in the oven. But Calpalon has many lines so you can select a size and specific type to meet your needs. I am very happy with this purchase and would definitely recommend it. It was a great pan for nearly a year
I have the 10 inch, and I have taken care of it very carefully. I use it most days. It was a great pan for nearly a year, and I am buying another, but I don't expect it to last much more than a year. Just short of a year, my current pan began sticking in ways that required more and more cleaning and scrubbing time--always with soft sponges and paper towels--and now, at 14 months, it's pretty much finished. The non-stick surface slowly degrades over time until it is just no longer a non-stick pan. If it's worth it to you to have a good non-stick pan for a year at this cost, then you will be pleased. If you hope to coax more use out of it than that, then I believe that you are likely to be disappointed.

So good, I'm getting another
This is a great ceramic pan. I've had it for six months, and it works perfectly. A couple things to recognize when using a ceramic pan:1. Don't cook on high temperatures, as it will degrade the ceramic coating over time.2. Don't use abrasives when cleaning the pan. A little warm soapy water and a dishcloth or brush will loosen whatever residue remains in the pan.3. Use oil, butter or a spread such as Smart Balance, Country Crock, etc., sparingly. You really don't need much of it.4. Don't use the pan for deep frying food such as chicken, fish, country fried steak, etc. A cast iron pan or a regular Teflon coated pan with a good heat spreading clad core is much better. I like the Farberware Millenium for frying.5. If you cook eggs in this pan and want then sunny side up or basted, put just a little butter or spread in the pan, medium to medium low heat, put the eggs in, wait until they start to solidify, then put in about 1/4 cup of water, turn the heat down a bit and put a lid over the pan to trap the steam. In about 40 seconds, the eggs will be perfect - yolks soft, white firm but no crustiness at all. The eggs will slide right out. A little warm soapy water and the pan is good to go.Going to order a couple more today -- that is my endorsement.

Don't waste your money!
I was unhappy with this product so I went back to review it and was surprised to see that I only bought it a year ago. I only bother to review things I really like or really don't like. This pan falls in the really don't like category. The pan cooks all right, but in one year it developed bald spots where the coating just disappeared off the inside, and the handle is just about ready to fall off and can't be tightened adequately. I have probably used it less than once a week to cook for two people and have never used a metal utencil with it - only plastic and wood. I have only washed it with a dobie (scrunge). None of my other pans have worn like this. The quality is just bad. I'm going to have to replace it. One year is not enough!

Not for real cooks
The pan is quite attractive. It is too light weight for even medium heat and on low, cooks too fast. Eggs are tough. Certainly a nonstick, no doubt, but the cooking qualities are awful. It will not go into the oven because of the plastic handle. Perhaps in a year or so other manufacturers with better pans will adapt ceramic to their line. For now, unless you just want fast, non stick, pass.

Two Stars
Flimsy handle. Had to tighten twice already.
