Delicious pancake mix--can be made Top 8 Free!
As someone who is Top 8 free (no wheat, dairy, eggs, soy, fish, shellfish, nuts or tree nuts), I love this pancake mix. I usually make up the entire bag and just freeze what I don't eat. They are really tasty--they almost have a funnel cake taste to them in my opinion...so of course, I love them with a little maple syrup and dusted with powdered sugar. I use Ener-G egg replacer for the eggs and rice milk or coconut milk for my milk replacement and they come out perfect. They also have lots of recipes on their website and I can't wait to try out their all purpose flour--I have been dreaming of a cake or cupcakes that I can eat for a long time and the recipes online look amazing.

Expensive But Tasty
This vegan pancake mix is made with organic whole grains and it is non-GMO project verified, but not all of the ingredients are organic, and of course these are gluten free. My sister can't tolerate gluten and it is hard to make waffles or pancakes that taste decent and are gluten free, without breaking the bank. The Bona Dea pancake mix is certainly tasty, but it is noticeable different from those buttermilk pancakes, but you can make it tastier with certain toppings, but the price tag is insane. One pack of 15.3 oz makes about 8 servings, as stated on the bag. Thankfully there are two packs but it is obviously more expensive than the usual buttermilk pancake mix. You are getting higher quality ingredients and it is vegan. The price tag is worth it in my opinion if you need a vegan pancake mix that also tastes good.The millet flour does give it a slightly nutty taste and there is a trace amount of vanilla also, but it is nothing over powering. Most importantly for me is that these are produced in an allergen free facility because some mixes can have no milk, nut or etc. ingredients but are produced in a facility to also produces those allergens, so I know that my sister is safe with these Bona Dea pancakes. These are free from 8 allergens: milk, tree nuts, peanuts, eggs, fish, shellfish, soy, and wheat. There's already sugar cane in there so there's no need to add sugar.You can adjust the recipe to your liking, but it is quite simple. They have a suggested recipe but it contains eggs so I simply subbed out the ingredients that I did not want in there. The recipe is: 1 and half cup mix, which is already half the package), 1 egg, 1 cup of milk, and 1 tbsp of oil. I subbed in an egg substitute for the egg and unsweetened applesauce might worth as well, and then rice milk for the dairy milk. They came out surprisingly fluffy and not at all of tough or gritty texture. They are noticeable so there's no chance of tricking your non-vegan friends into thinking that this is just normal pancakes. I didn't try the tip to add salt and white distilled vinegar, but I will try it next time because it could make it more fluffier.I topped it with non dairy "butter", fruit, and honey/agave. I also tried it with coconut milk whipped cream with fruit, and another one I tried it with bacon and egg substitute. The bacon does cancel out the vegan portion, but they all came out tasty. My sister had multiple pancakes and as long as they pass her standard, it is worth it to buy this, even with the heftier price tag. With two packs, I can probably get about 2 batches of 6-8 in half a package, so one package would be 4 batches of 6-8 and then multiply that by two for two packages.

Really good GF mix!
I usually use Bob's Red Mill GF pancake mix, and the pancakes always turn out really good, so this mix had a lot to live up to! Here's what I think about Bona Dea:-First off, I like the ingredients of Bona Dea (and Bob's too, but this review is for Bona Dea!). Simple, wholesome, and no extra, unnecessary filler.-Second, I like their mission- it's a conscious company, and I really love that the food is delicious AND the company is great as well.-Third, the recipe is simple- a cup of milk, 1 1/2 cups of mix, an egg, and a Tbsp of oil. If you use this recipe, you will get two sets of pancakes out of one batch (and I got 9 medium-sized pancakes each time I made the mix). NOTE: you need to let the mix sit 5-10 minutes (after you add the wet/dry and stir) before making the pancakes.- Fourth, the recipe can easily be adjusted. I add some Great Lakes Gelatin powder to add more protein, blueberries for some fruit, vanilla and cinnamon.....yum! The pancakes plain don't have a lot of "wow" flavor (hence the 4 stars), but they really can be "souped up" to be yummy!- Fifth, the mix cooks SO well! I was impressed as the pancakes were cooking at how well they bake, and how light and fluffy they come out. So many GF and/or Paleo pancakes are dense and heavy....these are so light and airy, like I remember pancakes used to be before transitioning to gluten free.Overall, an excellent product. I like having the mix on hand for lazy days when I don't feel like making pancakes from scratch! I would definitely recommend the mix (plus your own personal additions to make them taste even better!). Great product!

Not bad for Gluten Free But Won't Replace My Regular Pancakes
No one in my family has a gluten allergy but we are always looking for more healthy ways of eating. The pancakes are the first gluten free product they we have tried that we haven't immediately disliked. We have tried a million different bread recipes but they always come out tasting flat and stiff. The good thing about this mix is that the pancakes come up pretty fluffy. I made these for my kids with some chocolate chips in them (yes, not exactly healthy) and they seemed to like them except they said they were really dry. I also made some standard ones using the recipe on the package. It's hard to compare these to other brands as this is my first gluten free pancake mix so I can only compare them to regular pancakes. What I can say is that these don't taste like panacakes I normally eat. They have a different initial flavor, almost sweeter, and are a bit stiff even though they come out fluffy. They are diefinitely dry like my kids said. But I wasn't immediately turned off by the taste like I have been in the past.Overall, I don't think these will replace my morning pancake breakfast (not something I have often anyway). As I said, we are not allergic to gluten so we don;t have to be as careful as others. I think if we were, these would be a great option. We plan on trying some other recipes with the remaining mix as we have read some other reviewers who have tried a few other ingriedients with it.
