Excellent taste
I made a tang zhong with it to add to Senora flour for rolls. It lent a lightly sweet taste and the most nutritious form ofcorn flour bakes up nicely dark golden when mixed with othergold flours. I will try polenta next and report back on theresults. Spendy yes. But try to get organic blue corn flouranywhere and you will find it is reasonably and competetivelypriced

Pricey but Worth it!
My family loves this corn masa. I mostly use it to make vegan pupusas (vegan cheese stuffed tortillas). I love the taste and it's easy to use just the regular stuff from the international store but better. Its organic and the dough is more maliable than conventional masa which is great from stuffing and then flattening them. The only downside is that it's more expensive but we love it and would definitely buy again!

Works great! But a little coarse, so you have to modify recipe
The flour is light blue like the picture, but when you mix them up, they turn more of a dark purple color. If you follow most of the instructions online, these still work, but they fall apart, can't be pressed too thin, and are a bit hard to work with. What worked really well (for 4 corn tortillas about 6" in tortilla press):1/2 cups water1/4tsp salt1/2 cup masaStir up really wellmicrowave for 30sstir really wellmicrowave again for 30sIt should now look more like cooked oatmeal- should take on a darker color, and be less grainy/ more like play dough.Wait until it cools down a little, separate in half, and half again- roll into balls and press in tortilla press (or between books, etc- just want to use plastic on both sides of whatever, and re-use them).Using that- the coarse flour actually absorbs more water, and you can press them as thin as you want without them breaking, and you actually get really good puffiness while cooking (put in a hot cast iron skillet, cook until the edges start lifting up, then flip, press down hard with back of spatula until edges start lifting up again, and big air pockets form, flip again and press, cook at long as you want if you want brownish spots)Overall very pretty, and not bad to work with once you get it absorbing water correctly, but too coarse for most of the directions on the internet.

Does not come with a label.
I felt uneasy using this, since it was packaged in an unmarked plastic bag. It could be anything. The taste was ok. I wouldn’t order it again.

Organic non-gmo masa harina is not easy to find but of course Amazon to the rescue! Love using this for doors and fresh tortillas. Really good!!
