Great quality for money
You’ve probably noticed that vanilla has become a lot more expensive recently. A labor shortage and storm in Madagascar has really put a damper on their production of Vanilla. Thankfully Mexico’s Vanilla crop is going strong. For those that are curious this is why their vanilla is better priced compared to others on the market.This vanilla is lovely, smells amazing and has tasted fantastic in all that I have made with it so far. I love the flecks is bean seeds in my ice cream and I didn’t have to scrap a precious pod to get them.The packaging was also excellent. It arrived extremely well wrapped in paper and bubble wrap tightly in its own box. Clearly this has been an improvement over some other reviews which arrived broken.In short, if you are an avid baker or dessert maker or vanilla holder (like me) this is a great product to have on hand. It doesn’t cost so much that I feel bad using it for all sorts of things and it’s better than plain extract.

Better than Madagascar Vanilla
Given the recent rising costs of Madagascar Vanilla I figured I would give this Mexican Vanilla a try and see how it compared. I purchased a couple of 8oz jars and made a couple of quarts of Vanilla Ice Cream using both the Madagascar and Mexican vanilla and took them into work for some taste testing :).The results were that every person who tried both versions of Ice Cream preferred the Mexican Vanilla with only one exception who still preferred the Madagascar (still a great vanilla).When testing I found that the Mexican Vanilla had a slightly sweeter more robust flavor to it than the Madagascar vanilla did. Both were high quality Vanilla Pastes, and the recipes were identical other than the Vanilla, and the Vanilla was the star of the show as this was plain Vanilla Ice Cream. In the end both quarts of ice cream were completely finished off, both versions were spoken of highly, but when asked to choose the Mexican Vanilla simply came out on top.I would definitely recommend trying this vanilla, this will now be my new go-to vanilla instead of my previous brand. It is significantly cheaper and tastes better, not just to me, but to nearly everyone else that also tried it. If you are considering trying out this Vanilla don't be concerned about making the switch. This handily beat out my previous standard for Vanilla (Nielsen Massey Madagascar Vanilla Paste) that I have used for years. Give this one a shot, I think you will be pleasantly surprised.

Game changer for cooks and bakers!!!
I will be honest, I was really apprehensive about purchasing this of vanilla bean paste because of the price, But I have gotten into the habit of making my own pancakes from scratch And occasionaly I will make my own sweet potato pies from scratch. I had read several reviews about this particular Vanilla bean paste So I put it in my Amazon cart. This Amazon cart is my husband's account but I use it to order products. My husband placed in order and got this vanilla bean paste for me, so it wasn't like I went ahead and ordered it myself. I was super excited when the order arriva couldn't wait to use it. Let's just say that I will never use of another bean extract again or as much if I have this paste available. The of another flavor is so pronounced and so deliciousAnd I love the fact that you see the little of another being specs. This is one of those situations where you truly get what you pay for and it has definitely changed my approach to baking or cooking foods that require vanilla flavor. I love this vanilla. Unless making divinity it makes it to brown. But the flavor is very nice.

Better than expected. This is now on my permanent spice list for vanilla!! Expensive but worth the money for the discriminating tongue or chef.

Chemical smell and serious lack of flavor
I became a vanilla bean paste convert several years ago - I blame it on watching too many baking shows. Anyway, once you use vanilla bean paste, it's impossible to go back to regular extract (in my opinion). After reading the reviews, I was really excited to try the Blue Cattle Truck Co's paste. It arrived well-packaged, so no problems there, but when I opened it, there was a really strong chemical/solvent smell. I looked at the ingredients and figured that it might just be the alcohol from the extract. Where my issue really comes in is the lack of flavor, as compared to other brands I've used (LorAnn, N-M, Singing Dog, etc.). I recently made a mascarpone whipped cream topping, and I put several tablespoons of this paste into it - I just kept adding more and more. The specks were there, but I couldn't taste even a hint of vanilla flavor. I wound up putting in regular extract, which kinds of defeats the purpose. I don't buy vanilla bean paste solely for the flecks. Maybe I got a bad batch; I don't know - I just know that I won't buy this again. The price per ounce is better (cuz, man, vanilla bean paste is pricey these days), but if there's no vanilla flavor, what's the point? I'm also really put off by the smell - it just didn't smell like any others I've used and when something smells like solvents, it makes it very unappetizing. I wanted to be happy with this product, I truly did, but it just didn't work for me.

Great product, poor packaging
This vanilla paste has deep, rich flavor and is fantastic for all the cooking and baking applications I've used it for.My only complaint is that I have ordered it twice and each time, the jar has arrived leaky and with wasted product all over the packaging and box. It's difficult to estimate but I'd guess I have lost 15-20 percent of the product due to leakage.
