Tie Kuan Yin translated from Chinese means "Iron Goddess of Mercy". Chinese legend says that there once lived a very poor farmer in the Anxi county of Fujian province. He noticed a dilapidated temple on his way to the fields that nobody took care of. The farmer didn't have any money but at least he could sweep the floor, clean the temple and light incense. Twice a month, for many months, he repeated the same task. One night when he was deeply asleep the Goddess appeared to him. "Go behind the temple and you will find the treasure but don't take only for yourself, share with others" she told him. The poor farmer checked everything around the temple but found only a single tea shoot which he planted and nurtured into a large tea bush from which he made the finest tea that he share with others. Word spread of this wonderful tea and thus the Fujian Province became famous for the finest Iron Goddess oolong tea. The dry tea leaves of Ti Kuan Yin are much heavier than other Chinese teas and it is described as "weight like iron". The tea produced from this bush glows with a golden yellow liquid, diffused to a distinct toasty aroma, and has a delicious sweet taste.
