I make a sourdough loaf every workday, and keep my grown kids in toast and sandwiches until meal team. The recipes I follow uses 680 grams of white flour, 120 grams of wholemeal flour, 14 grams of salt, 220grams of sourdough starter and 450 grams of tepid water. Perfect every time. Method1) I mix the 2 flours and salt together dry into my electric mixer bowl,.2) Then separately add the sourdough starter and water into a 2nd mixing bowl and whisk to a froth.3) Start the mixer on low speed, and slowly add the liquid. After a minute or two it will all come together and leave the sides of the mixer bowl clean. Stop the Mixer at this point.4) Remove bowl from mixer and do 4 fold or more folds every 15 min - Repeat 5 times, Sprinkle a little white flour over the Dough if its a bit wet. After an 1hr 15 mins, Turn out onto a floured worktop, stretch and tear 4 sides, then roll back to a ball, leave for 20 -30 mins the stretch out and place in well floured basket.I make mine in around lunchtime, then place the basket, covered in lightly oiled cling film, in the fridge until 9pm. At 9-10pm it comes out the fridge and it rises over night, I cook it around 6-7am ready for breakfast. It takes 30 mins at 215 ℃, I place a tray of water in the base of the oven to get a nice crust, and I slash to top with a knife just before it goes in, make deep cuts as they just self heal.It's easy. ### ⭐⭐⭐⭐ UPDATE - Covered in tiny bugs! Terrible. *by T***M on Reviewed in the United Kingdom on 3 August 2020* Apparently there was a stocking/storage issue and the business owners have purged their stock of these rectangular bannetons. The customer service I received from the Bread Story was phenomenal and they do really care about their customers. If you get a product from them, and if you have an issue with it, reach out to their team to resolve it. I'm sure they'll come up with a way compensate for the problem. They sent me a few other bannetons to replace the bad batch of rectangle ones I received.== ORIGINAL REVIEW ==- Covered in tiny bugs! Terrible.- 1 star- Don't buy this. The banneton was covered in tiny light brown bugs. There were dozens of them hiding in the gaps and some just hanging about in the open. I found most of them under the liner, and immediately sealed it up and returned it in the same day.
