Superb Prep and Bread Knife
I bought this knife on the recommendation of Anthony Bourdain in his book, Kitchen Confidential. I figured it had to be a good one as he said this was the knife currently used by New York City prep chefs - a pretty esoteric bunch of hard demand users. My expectations were easily met.Just hefting this knife for the first time told me almost all I needed to know about it. The angle of the handle, the way the knife easily balances and the solid feel of the handle imply one could happily use it all day every day. There is something so just plain right here that it becomes obvious even before taking that first cut.That first cut is a wonder too. I won't say this is sharp because it isn't. It is mama jama hide your daughters sharp. While it has an edge correctly described as serrated, don't confuse this with the Ginsu or Ginsu-like saw edged 'knives'. This is a wavy serration with a sharp edge within the widely spaced 'teeth'. This means the knife cuts rather than saws its way through food. The result is the sense of using a superbly made sharp edge knife rather than something resembling a hack saw - a distinct sense of the artisan rather than the craftsman.I've thrown all I can at this knife and it's handled it all with aplomb. Highly recommended by Bourdain, and FWIW, by me too.

The only knife you need!
This knife was recommended by Anthony Bourdain. When he said it would replace all the expensive knives in your kitchen I was skeptical. Turns out it does. This knife is incredibly versatile and sharp. It works on everything from bread to frozen meat. It glides right through. It is extremely sharp and that is the only drawback. You must use it with great caution. I would buy again and again. It should be standard in every kitchen. The best $50 you will EVER spend.

Great knife for all around kitchen prep work.
If you like an offset knife, this one is great. I use it for just about everything. I was a chef and still like these offsets better than anything else.

Anthony Bourdain was right!
Was in need of a good utility knife. Read No Reservations, in which he recommends the Dick off-set bread/utility knife. It is wonderful. Slides right through a bagel with no effort. Watch your fingers, very sharp. AB is correct. You don't need a drawerful of assorted knives. Just this one.

Very Good Utility Knife
I've used this for over a week doing a lot of utility cutting, not bread, and this knife works GREAT. For what I have done the cutting is pretty much effortless. Highly recommend this as a utility knife. I use a knife to cut bread, but since I cut at an angle to make the piece longer, this is too short for me to be a bread knife, but I'm sure that it cuts bread easily if you are buying it for that. I'm going to guess that when I make heavy breads such as pumpkin bread that this knife would go through it with ease. Price is a little high, but I love this thing so far so it's worth it to me.Update: I don't know if it's because I'm left handed and the serrated area of the blade is more than many other serrated knives I've used, but when cutting some items the blade tends to pull to the left as I'm trying to cut straight down. I notice it when cutting onions and something else but I forget now. It means my slices are not even and it's a bit irritating.I bought a sharpener that I've used with my older Cutco (late 90s version) and after sharpening the serrated 6" utility knife of theirs, it's better all around than this knife so I have to reduce this to 4 stars and I debated making it 3. This knife cuts many things fine for me though, and it slices easily, in fact it moves through many items like a knife through warm butter.I don't know if a right-handed person would have the same problem. Blades are funny that way. The Cutco works great for me and my wife and she's right-handed, and the serrated area is smaller on that knife.

Best overall knife in our kitchen
Best all around knife in our kitchen. Have purchased quite a few of these knives as gifts for friends and family.

The new model I like less well than the one I bought 15 years ...
As a pro chef, I use this knife daily as a utility knife. The new model I like less well than the one I bought 15 years ago. The new handles, while more sculpted, don't fit my large hands as well as the old. The new blades are thinner than the old blades too. Still, I own five of these and find them indispensable in the restaurant kitchen and at home. But a warning, a knife is a very personal thing and just because this works well in my hand does not mean it will work well in your hand. Try before you buy.
