Review: Great stuff! - If you do some research on natural sweeteners with a zero glycemic index, you will see that Erythritol is one of the best. It is a sugar alcohol found in various fruits and vegetables like Xylitol. But unlike Xylitol, it is not dangerously toxic to dogs and does not have bloating, gaseous effects. If you don't need a sweetener without blood sugar effects, you can look at brown rice syrup or agave, since they have a very low effect on blood sugar. If you want no blood sugar effects at all, I'd recommend this, since it has a very nice taste (like sugar) with no aftertaste. Stevia is another option, but is very strong and has a less appealing taste. If you use even a bit too much, Stevia generally has a rather bitter aftertaste. This is not true of Erythritol. I would say the only downside is the cost and that it is only 70% as sweet as sugar. You can spike it with Stevia to make up the difference if you like Stevia. It doesn't take much to add to get it a lot sweeter. You should shake it up really well before using, though. Note: If you want to buy this particular item, I discovered that this company has not charged me extra shipping for more bags going to the same address. I would avoid EmeraldForest, though, because the Erythritol I got from them had a very strange, foul smell -- like mothballs -- and had a faint aftertaste that was the same. Their customer service was very nasty when I called to return it, in spite of their "100% satisfaction guarantee". I am sticking with Now Foods from now on. Also: It is a bit misleading that they call this particular item "powdered". Regular powdered sugar is pulverized and has cornstarch added to give it that silky feel, as well as calcium phosphate to improve its flowing ability. What they mean here, though, is that it is a much finer grain than their regular erythritol. It is still a grain, however. I buy it because it dissolves faster than the larger crystals, but both are good products.

I have a massive sweet tooth but I know sugar is awful for you, and I also subscribe to a keto diet which means steering very clear from sugar. But I still want to enjoy some cookies or brownies or a nice sweetened coffee or tea some days (seriously, you can't beat an espresso with heavy cream with a teaspoon of this in it or a little bit in a cup of chai tea, it's heaven!). No aftertaste like Stevia or similar sugar replacements, it's ever so slightly less sweet than traditional sugar (but keto-ers like me are unlikely to notice as our tolerance for sweet gets dramatically reduced in a lot of cases), and it melts in warmth very easily so there's no worry of making a hot drink only to have a layer of sweetness coating the bottom of your mug because nothing melted and mixed properly. The 2.5lb bag is also an excellent value for the price and one of the best prices I've seen for this much Erythritol. I used to be Swerve but I'm pretty sure I'm converted to NOW Foods. I don't use it super often so this much will definitely last me a long time, but I love that I don't have to pay an absurd amount for it all either.

**Q: I am confused because it says no calories but has 4 carbs, carbs have calories so how can this be?**
A: Fiber also counts as a carb. However, when calculating NET carbs, you subtract the number of sugar alcohol carbs (like erythritol) and fiber from the total carbs. 

Net carbs are what your body can use, and is the number that is important in any low carb diet like Atkins or me to. So 4 total carbs - 4 sugar alcohol carbs is 0 NET carbs.

**Q: Does it have any aftertaste? How much does it taste like sugar?
I couldn't stand stevia's aftertaste.**
A: no aftertaste like stevia and the other 'substitutes'   Not sure how to answer about how much it tastes like sugar.  It's pleasant tasting, but you can tell it's not sugar. The biggest downfall is that you have to use more to get the same sweetness as you would get with sugar.  So Erythritol is an expensive alternative.

**Q: Is this sourced from china, or are the ingredients used to make this from china?**
A: I emailed Now Foods, and their response was "may come from either China or US. In either case it is non-GMO.".

**Q: How is this produced used in baking?  Is it a 1:1 with sugar?**
A: 1/2 tsp Stevia powder combined with 1 cup Erythritol gives me the 1:1 ratio (maybe a little sweeter) that I like!  Experiment!  There is no aftertaste since the amount of Stevia is so small.

### ⭐⭐⭐⭐⭐ Love this product, but you may need to pulverize it for many uses.

I purchased this product based on many good reviews and I could not be more pleased. The "cooling effect" people describe CAN be avoided, but in my experience you must use a blender, or coffee grinder to grind down these crystals beforehand. The first time I used this product, I did not pulverize the crystals and made some mousse with it. The mousse, while having good flavor, did indeed have a "cooling effect" (The best I can describe this cooling effect, the feeling of a minty alcohol evaporating off your tongue), however I believe this cooling flavor is caused by the crushing of the crystals in your mouth. The way I avoided this "cooling effect" was to first grind down the crystals using my regular old blender (Be careful because this can cause the erythritol to become fine enough to float in the air, and look like smoke. I opened the blender outside so I didn't breath any of it in, but I wouldn't imagine it could really hurt as this is a natural product). After blending, the erythritol looks like very fine powdered sugar and is now ready to be used in baking, or cold dishes where the crystals become hard again. Used in hot dishes, one does not need to grind this down, as it will dissolve and not re-crystalize unless the dish is cooled again. i.e. coffee, or pasta sauce. The Good: Great value. great taste. very pure. nice resealable package. shelf stable as this will not absorb moisture. Naturally sweet. no chemicals or aftertaste (as long as you grind) The Bad: Would prefer this already powdered. Overall 4/5 stars: Very please with product, although I will look for a pre-powdered version of this product, preferably from "NOW Foods" as they have great quality products.
