How much does this thing stink when you are using the activate setting?

You smell the drying. Light not to bad. When you decarb it is close to the same smell as if tou used an oven. I still give it a 9.9 out of 10.

If you already have an herb or spice that's in a fine and dry powder form, how well can it extract the flavor and infuse it in oil/butter/honey/etc.?

Ingredients like powdered spices, that are smaller than a grain of sand, will escape the holes in the herb pod and just dissolve into the infusion. We recommend using whole herbs and spices with the LEVO. For example, using whole cinnamon sticks or fresh ginger instead of ground cinnamon or ground ginger.

What would happen if i skipped the Drying Proces and went to activate instead ?

Drying is only necessary with fresh greens/herbs. If you are infusing for flavor skipping this step changes the flavor profile. If u are extracting THC skipping this step will ruin the result

Is it normal for it too say warming for 40 minutes and not infusing ?

The "Warming Up" period can take between 5 and 10 minutes on average, depending on different the settings and other factors. If it's taking longer than that please send us a direct message so we can help!
