looks like it is for medium to small sized pans?

Maybe small to medium pans work well, but I have a 12 inch pan I use a lot and I have had no problems using it, might take a little longer to heat the entire pan but it works well. What is the temperature range?

Temp range is about 460 at high on one burner, but lower if you use two burners. When you elevate one burner, the burner goes down in temp.

will 120v 20 amp circuit work? or 120 v, 30 amp

1800 watts at 120v is about 15 amps. A 20 amp dedicated circuit should be fine. If you have other stuff on the circuit, you're likely to have problems.
