Good simple recipes
Potato and rye bread is amazing

Just like my wife used to make.
After my wife died a few years ago I tried to discover and recreate her recipes, but there were several I couldn't find either in her collection or online, partly because I didn't know their Finnish names. I was delighted to discover this book written by a woman also from Karelia which contains several of them and others besides that take me back to Suomi.This is a book of baking, not cooking meals and needs to be indulged in sparingly if you don't want to put on weight! But, to my mind, it's in baking that Finnish cooking holds its own, and despite the generalised title most of the recipes are Finnish, although several differ little from those of its Scandinavian neighbours. It's been Anglicised to some extent to make the ingredients easier to find, e.g. in using vanilla extract instead of the vanilla sugar that's more common in northern Europe. I particularly like the recipes for the traditional breads, which are quite different from the fluffy Chorley Wood stuff commercially available in the UK and N. America. I particularly like the flat round dark rye loaves that you find at the breakfast buffets in Finnish hotels, and Ms. Mink's recipe works well for me, although I'll try to do them with a sourdough starter instead of baker's yeast sometime. So far all the recipes I've tried have worked well - a couple were a bit too sweet for my taste, easily remedied next time. Some of the savoury pies are tempting too.Altogether a good introduction to cooking and eating baked good in the Finnish way.

Love this - recipes are reasonably easy.
Perfect for those who like Scandinavian baking. Good mix of breads, cakes, pastry, and biscuits. I've done a number of the biscuit recipes, one of the breads, and the blueberry tart. They always come out great and are easy to make. Would definitely recommend.

An Ikea book
Most of the recipes are straightforward, then you come to one which lists pickled orange peel and strawberry pearls.

Highly disappointing.
The book as a whole is a great idea for those looking to explore a different way of cooking. The meals are simple and basic with a kind of raw feeling to it.Now, for the bad part. The book has inconsistant recipes. One recipe is for 8 small rolls, next you cooking three loaves, then to 3 half sandwhiches worth of filling. The measurements can be quite comical (in a frustrating way), lukewarm, couple of, handful, etc. This book, i would say is for an intermediate understanding of cooking.Having tried quite a few of these recipes, I thoroughly enjoy making them and have had to tweek quite a few for personal preference, but find that the bread can be quite heavy.Overall, the book has unique recipes, with a variety of diffent meals/snacks ideas. Wouldnโt say it was healthy in any form as reliese heavy on pastry/flour. Can be quite tasty with some options and open minds to new flavours. Wouldnโt recommend it to anyone as poorly constructed, and incosistant in meal sizes.

Well-organized book, recipes easy to follow
I love the way the recipes are described and illustrated: photo of the finished product on one page, recipe on the other. So far, I've only tried the Tiger Cake which is very similar to the European Gugelhupf. However, the Nordic version includes heavy cream. The cake was perfect: great taste and maintained its moisture for several days. Now, that we have cool autumn temperatures, I intend to do more baking and try other recipes in this book.

Nice book with photos for each recipes.
I bought this Nordic Baking Cookbook because I want to learn more Nordic baking since I moved to Europe.POSITIVE comments :๐๐ป This hard cover cook book arrived on time in perfect condition. Product as described with no defects.๐๐ป The moulds come inside a thick postage envelope.๐๐ป I have tried the 2 recipes so far. The bread was quite tasty.๐๐ป This is great this cookbook is in English. It is easier for foreigner (i.e. myself ๐) to learn Nordic cooking when they moved to EU.NEUTRAL comments:๐๐ป My Finnish baker friend said to me that some of these recipes are not quite traditional Finnish. She said the recipes may be more suitable for British market. Yet I found the bread that I tried to make taste good. I am still satisfied with the recipes.๐๐ปI havenโt try the rest of the recipes yet. Will add more comments about after I try more.NEGATIVE comments:*I canโt find any fault with these recipes so far.AS A CONCLUSION:Yet I tried to make the carrot & oat bread and rye bread, they turned out to be rather tasty, I am still very happy with the outcome of this recipe. And I altered these recipes to my taste too.And each recipe came with a nice photo. Really appreciated that. Will definitely try out more recipes later.I enjoyed this cookbook so far.Hopefully this is helpful.

Really nice and useful book
My family loves my grandmother norweigen bread. I wanted more options. Great gift or personal collection book.

A good baking cook book
Bought this as a gift for my sister, she got some great ideas and there are good bread recipes ( I can vouch for them)

Simple and do-able
I'm tired of complicated cookbooks. This one is exactly what I wanted -- simple recipes for hearty bread and other baked items. Good price, too, and shipped quickly. I'll be using this a lot this fall and winter.
