Viele Jahre habe ich meine kupferne Cataplana auf dem Gasherd genutzt. Die rund um die Cataplana wärmende Gasflamme hat zusammen mit dem wärmeleitfähigen Kupfer wie von selber perfekte Kochergebnisse geliefert. Wie bei den Portugiesen, welche überwiegend auf Gas kochen. Nun habe ich einen Induktionsherd und habe mir diese Cataplana bestellt. Sie ist perfekt verarbeitet. Allerdings wird prinzipbedingt nur die Bodenplatte erhitzt und Edelstahl leitet Wärme relativ schlecht. Ich bin immer noch am tüfteln, die alten Rezepte wieder so hinzubekommen. Es ist deutlich anders. Ich wünsche mir eine induktionsherdfähige Cataplana, welche überwiegend aus Kupfer ist. Ob das produktionstechnisch machbar ist, kann ich nicht beurteilen.

Ottimo acciaio inox, igienico e robusto. La possibilità di staccare il coperchio la rende trasformabile in un pratico Wok, per cucinare cibi di ogni nazionalità e non solo cataplane portoghesi. A mio parere è preferibile questa in acciaio inox rispetto a quelle in rame o in alluminio, in date condizioni rischiose per la salute.
