What is the difference between the professional (02970) and the standard(02910) (aside from the included cones)?

There is a big difference. The Professional is bigger and can handle larger size foods and the Power Speed and Watts are higher.

Footprint & weight of Pro model Salad

Sorry, I am not exactly sure what you are asking regarding the Pro Model Salad shooter. It stands around 8 1/2 to 9 inches tall. Made of plastic so it does not really weigh that much.It is sturdy though. I am not around it at the moment so I do not have the exact answer you are asking. If you need more of an answer ..let me know. All I know is that I really like it and use it often.

Can you please tell me if soft cheese like (velveeta cheese) can be grated with this salad shooter?

No, I tried yesterday, it's too soft. .. It was easier to cut into little cubes with a knife, but the salad shooter worked well on all my other cheeses, from mozzarella, coby jack, Monterey jack, and sharp cheddar... it saves so much time.

Will it grateb raw beets and carrots ?

I've sliced raw carrots but don't know about beets.
