All German knives are 58 +/- Hardness / 15 degree angle. No need to use anything higher than a 1000 grit whetstone as the metal is too soft to make any Real difference. Can use a STEEL. Most Japanese knives are 62-66 +/- Hardness / 9-12 degree angle. NEVER use a STEEL. Stropping on Leather vastly improves the Polish and Glide (sharpness?) of both knives.
