About the Author About the author A renowned chef, Sanaa Abourezk owns and operates a popular Middle East Restaurant in Sioux Falls, South Dakota. She earned a Bachelor of Science degree in Agricultural Engineering and a Masters degree in Nutrition from Cal Poly University in Pomona, California. She attended a cooking school in Florence, Italy, and the Cordon Bleu Baking School in Paris, France. She has worked as a nutrition adviser for the South Dakota Department of Health, where she advised clients on nutrition, cooking and healthy eating. A talented creator of healthy and delicious recipes, she has published two cookbooks, Secrets of Healthy Middle Eastern Cuisine, and Oh Boy, I Can’t Believe It’s Soy!, both of which are best sellers. Sanaa developed Gluten Free Vegetarian Mediterranean Recipes because of the many people who have told her of their suffering from celiac disease, which has severely hampered their enjoyment of food. This book is the result of long hours of research and recipe testing, and the author hopes that the recipes presented here allow more people with gluten sensitivities to enjoy these delicious dishes.
