6" Boning Knife - AUS-10V Damascus Steel

The Dalstrong 6" Shogun Series Boning knife is an extraordinary instrument. Beautifully balanced and surgically sharp, the knife glides through its work and sits comfortably in the hand -- and that's one of the knife's distinguishing characteristics. The robust handle contributes to the ease of use. But there are other features worth mentioning, not the least of which is appearance. The craftsmanship of this knife makes it as attractive as it is functional. Sitting on a cutting block, its classic design easily attracts attention. And Dalstrong's customer service is as good as its product. My questions and concerns were answered promptly and in detail. This is certainly the first of many Dalstrong knives in my kitchen. Please keep in mind that I am a verified customer, not a product tester. It's without hesitation that I recommend this product. I give it five starts only because Amazon doesn't allow for a higher rating.

I usually hesitate to write a product review until I've had a chance to test its durability. However, in light of the fact that so many have already touted this knife's durability, I will review it. I'm a former restaurant chef who still likes to cook for my family and occasional guests. A good boning knife is essential to me. I'm never satisfied with how butchers here in New England operate, so I constantly find myself trimming steaks, chops, chicken or whatever I buy, just to make it edible. Right out of the box this knife was amazing. Because of the combination of great ergonomic design and an incredibly sharp blade, the first job I gave it Was done in about half of my usual time. I love the look of it as well. It's a beautiful knife with a great looking Damascus pattern in the blade. The packaging is fantastic and I love the saya which protects it. I will be replacing all of my old knives with Dalstrong Shogun.

Honestly, I do no cooking, only eating. But my 38 y/o son, who is a chef, started purchasing these knives on recommendation of another chef. He has been so satisfied with them that he'd like to own the whole set, so for Christmas this year we bought the boning knife for him. He washed it right away, went out and bought two whole chickens, and showed his mom (my wife) how to de-bone a chicken "the right way"; she hates wasting food. Working with Dalstrong has never been a hassle, never detected a hint of sarcasm from them, have always answered my questions courteously and respectfully. They say they are a small family business and it feels that way, too. The knives he owns are beautiful, well balanced, rugged. Makes me wish I was a cook . . . almost. :-) My son highly recommends them, would use no other. They are not the most expensive knife, and there are probably some with highfalutin features, but if you want a professional looking knife, which will last you for the rest of your life, and not break the bank, this is the set for you. Hope this helps.

I really like this knife it feels great in the hand but when I unwrapped it out of the box it was dull, not what you would expect from a expensive knife. It should be razor sharp. Although I have since sharpened it with my wet stones and now work very nicely. I have used it to process a few animals now and seems to hold its edge.

Absolutely love this knife. I use it daily for meat fabrication. Gorgeous knife. Had an outstanding edge straight out of the box and has retained it extremely well. I run on my ceramic rod every few weeks and it’s good to go. Handle is extremely comfortable. As a professional chef of nearly 15 years it is amazing to see a company put out such an outstanding product for this price point. I want to add the shogun series kiritsuke to my collection. Recently had a child so that out the window. If dalstrong wanted to send me one by chance they certainly could add me to the list of chefs that enjoy and promote their amazing product. 😉

When opening the box of our first Dalstrong Shogun knife, the handle was unfinished without polishing. Looked like fine sandpaper was all over it. Contacted Dalstrong customer service and none other than the owner\founder himself replied and ridiculously quick too. Sent them photos of the issue and a replacement is soon on the way. Cannot ask for better customer service and that alone solidifies our choice to purchase more shogun series knives from Dalstrong. We refer many folks to products and more will be buying these knives due to our recommendation. Everything I saw in videos and read reviews shouted quality. Craftsmanship of the blade is excellent and I can say after using mostly ja Henkel and wustoff brand knives this is in a completely different high end class. I have a 38 day dry aged ribeye that is a few days away from being Dalstronged, I can't wait. Did a test cut on a fresh cold carrot and a light tap of the blade chopped right thru it with no apparent resistance. If their boning knife can do that I can't imagine how awesome the santoku will be that's designed for that purpose. Definitely recommend the product and a stand-up company backing what they produce.

This is the knife you want if you are serious about boning out ribs etc. Being Damascus with an AUS10 core it retains its edge for ages and a hone now and then is all it needs to keep you working. Had this one for about a year and hasn't actually needed to be resharpened yet. Very happy with it as I am with all my Dalstrong Shogun knives.

Satisfait, bonne prise en main

This is a beautiful knife oozing quality. It's proved a great addition to my kitchen and is now my goto knife. A great product which I'll be adding to from their range. It is a bit expensive but the time saving in use and the quality make up for any price issues I had before purchase. Highly recommended.
