It has certainly been my favourite gourmet honey because of the beautiful flowery perfumed taste. I have bought from the Tasmanian Leatherwood Honey Company all these years, and generally buy their largest tin. Alas they were out of stock on desertcart this time so I decided to look around and found Golden Nectar honey by R. Stephens. I was a little wary at first, but decided to go for it for two reasons: one it is a little less expensive than the other honey unit for unit, and two it is Organic! I love to support organic famers and do whenever I can. My guess is that the Tasmanian Honey company's honey is also organic but they don't state it on the tin. The bottom line is that R. Stephens Golden Nectar is every bit as lovely and as perfumed to taste as the other, and it has a delightful unctuous mouthfeel. I am using it and enjoying very much. Thank you. A++++

**Q: Is this honey pasteurized?**
A: Hi, 
    Thank you for your interest in our Leatherwood Honey.  In answer to your question the answer is yes – not for food safety reasons but for quality purposes.  The honey is heated and then quickly cooled at the time of bottling and this process delays the crystallization of the honey (or the candying of the honey).  If we didn’t do this, the honey would be hard and candied before it reached New York.  It allows the liquid honey to remain liquid for a good few years before it will naturally crystalize over time.
Rest assured, it is not detrimental to the honey – if we heated it at a high temperature for a long time, that would damage the honey – but because it is heated and then cooled very quickly there is no damage done.
