What exactly is amchur powder?

Amchur is unripe green mango, sun-dried and milled to a fine powder. That is the only ingredient - no salt, no sugar, no fillers, no anti-caking agents. It brings a clean, fruity sourness to dishes where you do not want extra liquid.

How is it different from lemon juice or tamarind?

All three add sourness, but amchur is dry, so it will not thin a rub, a dry sabzi or a chaat mix. Lemon is sharper, tamarind deeper and sweeter. About a quarter to half a teaspoon stands in for a squeeze of lemon.

How much do I use, and when do I add it?

Half a teaspoon suits a dish for four. The flavour is delicate, so stir it in near the end of cooking or sprinkle it over the finished dish - a long boil dulls the tang. In dry rubs and spice blends it can go in at the start.

What do people cook with it?

It is the classic tang in chaat, aloo dishes, samosa and pakora fillings, dry vegetable sabzis, chana and kala chana, tandoori marinades, dry rubs and homemade chaat masala. It also lifts dals and brightens a dry paneer masala.

My powder has clumped in the jar - is that a problem?

Yes, that is normal. Amchur carries natural fruit sugars and no anti-caking agent, so it draws moisture and forms soft lumps. Break them with a spoon and keep it sealed, cool and dry. The same powder fills every size, 3oz jar to 25lb box.
