Top dries out really quickly. Otherwise, it's fine.
Cute idea, but in practice it's hard to grow consistently, as the top (head) dries up really quickly and if one doesn't keep up with misting or watering the head a few times a day, the seeds on top will dry out and die, while the bottom grows beautifully.
