A: The wheat is murdered and then ground into flour to enable it to be extruded into Pasta shapes. Water and stabilizers are added to all packaged pastas to maintain shelf life and to prevent mold and decay.  Packaged pasta rarely has the same texture and flavor of a freshly made pasta. We use a pasta making machine at home and ground durum wheat flour to make fresh pasta without additives.
