The Essential Marathi Cookbook, a modern, easy-to-use introduction to several Marathi sub-cuisines, travels across the regions and religions of Maharashtra to bring out the most authentic and appetizing recipes from the state. Journalist and chef Kaumudi Marathรฉ presents a varied and nuanced selection ranging from the delectable entrรฉes long associated with Maharashtra, to appetizing and unusual side dishes, and a plethora of desserts, as well as, lesser-known but equally tantalizing family and regional specialties which have never before appeared in an English-language cookbook. The comprehensive introduction describes Marathi cooking basics, ingredients and techniques and also explains the special spices used in Marathi kitchens along with the methods for their best use in seasonings. Packed with personal anecdotes and food memories from the author and other contributors to the book, The Essential Marathi Cookbook is the definitive guide to Marathi food and customs. Recipes include: Pithla-Bhat (zesty gram flour sauce with hot rice), Shiryachi Poli (sweet semolina-stuffed bread), Ambyacha Loncha (green mango-mustard pickle), Spicy Kolhapuri mutton, Suranachi Koshimbir (elephantโs foot yam salad), Kelphulachi Bhaji (banana blossom stir-fry), Pach Dalinchi Amti (five lentil stew), Mugache Kadhan (Konkan lentil-coconut pudding), Bol Marie (East Indian coconut pie), Pathare-Prabhu baked karanjis (coconut crescents), Kharvas (first-milk custard), Khudi (sautรฉed East Indian-style chicken), Ukad Shengule (sorghum pasta), Kaumudiโs grandmotherโs Lettuce Salad Review: A must have book in all households - This book has almost all of the recipes that I remember growing up. Now that I am living in my own house bajillions of miles away from my Aai no idea how to make the foods I am so familiar with and cherish... this book definitely set me in the right direction. This is a must have book in all Maharashtrian households. Maharashtrians will definitely appreciate this book and so will everyone else. It's a sentimental find for me. Review: Excellent book on Indian cooking - Though the name is Essential Marathi Cookbook, it covers most of home dishes. It is nicely written and gives exact measure of ingredients for serving number of people.

All the Marathi items you can possibly eat!
I'm not a Maharashtrian but married into a Marathi family. I just got this book today and I'm loving the scope and depth of it. Thanks to the author for diligently writing this book which has tried to cover the A to Z of Marathi cuisine. Pros for me: 1. Includes not just the recipes but also the sets the foundation for a Marathi kitchen with tools, spice blends, popular veggies etc. 2. Includes dishes of all kinds (from snacks to maincourse, desserts). The chutney, pickles, candy section definitely roots the culture strongly..pure nostalgia. 3. Loved how the recipe names are in Marathi. There is a short description of the dish, followed by a crisp description of ingredients and process. The neat font and alignment makes the read seem easy and not overwhelming. 4. Recipes are clearly organised into groups for easy access. Vegetarians can easily skip the chapter on poultry and sea food unlike other books. Cons for me: 1. No pictures ๐ญ๐ญ๐ญ I found it hard to believe that such a great cook book is devoid of any pictures. Even if the author didn't want to attach pictures of each recipe, just a couple of glossy pages with a few popular items would also have been enough. But not a single picture..broke my heart. Reducing one star just for that. 2. The Marathi recipe names are written in English. Those who are unaware of the language wouldn't know how to pronounce them. A quick hindi/marathi/English phonetic transcription might help. All in all go for it if you want to deep dive into authentic Maharashtrian cuisine.

Amazing!
The recipes are authentic and the writing style is charming and very engaging. I have tried a few recipes and they were delicious! Most recipes are vegetarian, which is great if you're like me and trying to cut down on animal products.

Marathi cuisine 100%
I am so happy that books like this exist. Marathi cuisine is among my own personal favourites from the Indian subcontinent, together with the Goan and Hyderabadi cuisines, so I'd recommend this book for anyone that's a) vegetarian or mostly prefers vegetarian dishes and b) wants to know and learn one of the simpler, earthier cuisines of the peninsula. This book hardly requires expensive ingredients that are easy to get in the West (I live in Finland) and most of the dishes are easy to make, so also suitable for busy home chefs!
