Excellent full-bodied flavor and rare find
Deep, smooth, smoky flavor. This sauce is certified organic, naturally brewed, unpasteurized, and reduced sodium โ a combination tough to find. The description claims itโs aged in old wooden barrels, an artisan making technique with live probiotics. Iโm really no expert in soy sauce, but itโs the best tasting soy sauce I tried by far. I tasted it alongside with Kikkoman organic naturally brewed soy sauce, which is also highly rated. Kikkoman, while also very good, tastes quite flat in comparison, possibly because itโs not unpasteurized and raw. This sauce tastes very full-bodied, akin to a fine wine, and the reduced saltiness does not overpower the flavor. With regards to sodium, this is a comparison per 1 Tbsp: โข Kikkoman organic naturally brewed regular sodium: 990mg โข Whole Foods 365 Organic Shoyu Reduced sodium: 650mg โข This sauce: 720mg So this falls under the category of reduced sodium AFAIC.

Such good soy sauce
This is such good soy sauce. Tastes light and natural, but still pungent. My favorite.

Surprisingly very good taste!
I was looking for a good quality fermented unpasturized shoyu sauce and I found this. I then went on their website and read all about the company and the reviews here too and I decided to order this, alongside with their unpasturized aged miso. I am very impressed, now I am looking at their other products. I would highly recommend if anyone wants to have a raw shoyu which taste very good, raw with all the beneficial enzymes and bacteria, you only need a small amount as it is very salty. Yes, I know the sodium content is high but I do not consume a lot of processed foods, only occasionally and in small amounts so there is where most sodium in people's diet come from. Because it is not pasturized, I only add it after my food is cooked or slightly cooled, like miso.

Is there a low-salt version, please? Much too salty.
Nice flavor, seems like a healthier alternative but ohhhh, the saltiness is over the top. I need to see if they make a low-salt version...

Great tasting and made the proper way
Tastes great, made the traditional way and tastes great without excessive sodium. Try it in soups and dishes for extra flavor.

Subtle depth
I'm worth the extra dollars. I care about the taste and this has more depth than the standard american version of Kikkoman soy sauce. Tastes fantastic with sushi. I would like to take a small bottle with me to restaurants.
