Definitely needed to make good cheese!
Recently had the opportunity to use this product. I used it for homemade mozzarella cheese. I also learned that homogenized milk doesn’t have the proper stuff to keep the curds together. However, there is a work around called calcium chloride (pickle crisp) that helps.There’s not really any flavor in the product, just liquid rennet. I feel that it served its purpose as the cheese did set up well and fairly quickly. The cheese is firm as I had squeezed it tightly in the cheesecloth. It is a definite value for what it does. Plus the melted cheese won’t stretch without it.
