

VitaSpelt organic white flour is milled from 100% unbleached, unbromated, unenriched pure spelt. It's now my favorite whole grain flour for everyday baking, and I'm now using it in place of whole wheat flour in most things, or sometimes in combination with it. Twenty-five pounds may seem like a lot, but it goes quickly if you bake a lot of bread. I transfer it to a couple large covered buckets and just keep a few pounds in a bin on my counter. Combined with rye flour, this makes the best rye bread I've ever made. I also use it in other whole grain breads, and it seems to make a nicer loaf than when I use straight whole wheat flour, not as heavy, and it doesn't overwhelm the flavor of the other grains. Review: Beautiful bread, and baked goods - If you are glutan intolerant this flour might be your answer. I have used it for cookies, pies, cakes,gravy, etc... Recently I got a bread maker and it makes the best bread. Don't let anyone tell you it doesn't work the same as flour. The only difference between the two is that you might have to use just a little more spelt (tbls) to get the right consistency. This is very a fine flour so don't sneeze around it (just a little advice). It was my answer for many of health problems.

Great Flour
I absolutely have been loving this flour. I converted my sourdough starter over and have been making spelt bread with it. There is definitely a mild learning curve if you’re used to using wheat flour. Spelt dough doesn’t rise/expand nearly as much, it bulk ferments faster than wheat, the dough is more delicate and needs gentler handling, it also burns easier. I use 350 degrees for sandwich loaves and 400 degrees for artisan style bread, compared to using 450 degrees for bread made with your standard bread flour. I have also been making spelt pancakes with my discard, easy and delicious. Buy in bulk, divide into freezer bags and freeze what you don’t need and keep a bag at room temp handy. Great way to keep your flour fresh and it also keeps any eggs from hatching if any pests made it in. Organic grain sometimes contains organic bugs (I haven’t seen any), but it’s just extra protein.

Organic spelt flour
I think this is the only white spelt that’s organic on the market. I have purchased from this company for around 30 years. Always a good product.
