I do at least 3 parts water for 1 part millet. Toasing the millet grains for a few minutes on medium heat before boiling seems to bring out a very nice smell / flavor, but is not necessary. Heat the water to a boil with the millet and stir a bit. Then reduce heat to a simmer (low-medium) and cover for about 20 minutes. Fluff with a fork and take off the burner and let sit covered to cool for a few minutes and continue to absorb the water. **Q: Is it proso millet?** A: I looked up Proso millet it looks just like it. I don't have the original PKG to check. Grains are very small. Hope this helps. **Q: Does This Contain Gluten?** A: Packaging states “Batch tested and Gluten free” **Q: Does it really has 9% fiber? I like that it is organic and gluten-free. It is bland, not much flavor of any kind. I add lot of things to it when cooking (not necessarily all for the same meal. I can use chicken broth instead of water, or beef broth, along with onions and garlic and mushrooms. I also use different spices at different times, like cinnamon or Kodiak spice.
