How strong is this glue? Can it be used to reapir a crack in 1 galon water reservior?

I would think so, I used it on a conical fermenter for my beer brewing and its worked fine for a few years now. No major pressure on it, just 7 gallons of product.

Can it be applied to a jar to store food in?

I'm not sure, I can tell you its ratted Food Safe. I used it to seal a crack in a conical fermentor I use for home brewed beer and cider. worked fine and left no taste that I could tell.

(white) what is the texture of the surface after cured? smooth? gritty? matte? shiny? how can it be made as smooth as possible?

To make as smooth as possible: after you apply the stuff, spray some water with soap (detergent/shampoo works) and smooth it out with your fingers... this method works great for corners and joints where a bead is required.... will probably make a not so great job on a flat surface :-)

is it dishwasher safe?

The package says its temperature range is -62ºF to 350ºF. I don't know how hot a dishwasher gets, but it might be ok on the top shelf.
