You can mix it into whipping cream and it would tint it pink, but it wouldn't dissolve completely since whole berries have been used to make this powder.

How well does this dissolve in water? Can it be used to flavor sparkling water?

This is a dehydrated powder, intended for baking. I suspect it would float in water. It is pure (dried) raspberries, without any sweetener added.

Does the packaging say gluten-free on it? I need the <20 ppm guarantee of no cross-contamination so 'gl being in the marketing materials isn't enough.

Not very fine but quality is EXCELLENT

This is a great way to add flavor AND color without anything artificial! I baked raspberry mocha cookies using this and some raspberry emulsion, and the fragrance from the oven was OVERWHELMING. The color is vibrant while still being natural. A couple of tablespoons went a long way in a recipe for 3-4 dozen cookies!
