I couldn't use  liquids from the turkey as it cooks then?

You could but be aware that the "sleeve" section of the syringe is plastic, so Hot liquids above 60* C will damage it, also you would need to use a sufficiently large "needle" to ensure it remains clear of any more solid detritus "sucked" up. 
Perhaps the more appropriate question would be "why" you'd do this?, you would be better off injecting a flavoured "Ghee" as the juices will contain less desirable (uncontrolled) flavours and extracts. Heat some Ghee in a small pan with sliced (fresh) Garlic and Tarragon (French) leaves, strain allow to cool and inject.

are replacement needles available?

Yes, go to the Skipjack website and there are many types and lengths of needles available.  This gun is the real deal and a huge step up from the cheap plastic injectors you usually find online.  Is it worth the price?  Only you can decide that.  For me, it was worth every penny.  I inject almost everything now and the quality of my BBQ has really gone up.  Good luck!!

Are these needles a standard size?  Will regular injection needles fit?

I'm not sure what you mean by standard size. These are not "Luer lock" needles that twist in (like in the small injectors or medical syringes). There are treads on the end of each needle that screw into the injector tube. However, the needles for this injector (and all of our high quality models) may NOT fit the needles that come with inexpensive injector sets, including our SHOT model.
