I did 10 inch vase because I wasn't putting anything in the bottom. If you plan on adding decorative rocks or something I probably would get an 13 inch.

I don't have them to measure, but I'd guess 9-10 inches. I think the item description may give the stem measurements. I made bridal bouquets with them and the stem length was perfect.
