How chewy is the pizza crust with this flour? Is it close to regular flour? Thanks.

This is the MOST similar to gluten I have found. We even cooked it in our pizza oven. I follow the Ooni recipe from their website and it produced a chewy, delicious crust that even resembled a normal pizza crust! My husband said that if I hadn’t told him it was GF he never would have known! I can’t recommend this flour enough to all my celiac and gluten sensitive friends!

Gluten free wheat starch, dextrose,maize starch, buckwheat flour, rice starch, psyllium seed fiber, thickener guar, flavoring. 
Got directly from the bag.

Look at the us wheat association for some info in what Italy has been doing in gluten free flour research. I think I saw an article from back in 2014.

Hi, one of the pictures on the product page shows the ingredient table in japanese. what are the ingredients in this flour mix?

It's a little hard to see but they have it in all different languages in that picture. The English reads: Gluten Free Wheat Starch, Dextrose, Cornstarch, Buckwheat, Rice Starch, Vegetable Fibers, Guar Gum. This is the same list on the Caputo website. Hope that helps!

What are the ingredients of this flour? It seems a bit ridiculous to not list them!!

I emailed them for the ingredients a long time ago.  I know there is rice flour, gums, starches and depending where you get it from it can have soy flour.  I believe if I remember it also has milk powder.  Sorry could not remember full list.  I believe the smaller bags (2 kilo) do not have the soy if I remember correctly.  I can tell you it makes the best pizza crust I have ever eaten - comes very close to having "pizza".
